Fish waste, we don’t do that at Noordzee – Mer du Nord

Every day we offer a wide range of fresh fish in our fish shop, prepared dishes in our caterer and dishes at our fish bar. On some days, our provided marchandise sells better than on others. But if there’s one thing we can’t stand, it’s fish waste. So we do everything we can to keep the amount of it to a minimum.

Processing fresh fish

Every day we get a good amount of fresh fish delivered to our fish shop. But not every day we sell the same amount of fish that has come in.

The fish that remains at the end of the day is processed in different ways within our shop. Some of the fish is frozen to be made into fish stock (or fish soup!) at a later date. Another part disappears straight to our kitchen, where it is processed in one of our preparations or fish salads for the next day. Beautiful fish fillets are also regularly left over, which we can prepare on our plancha for our customers at the fish bar.

This way, there is always a minimum amount of fish waste left over.

Too Good To Go

By the way, did you already know that every Saturday we have a collaboration with TooGoodToGo? For those who don’t know this organisation/application: this allows you to reserve a package full of goodies at the end of the day at various department stores or food shops, and at a very favourable rate.

What’s left after that? Our colleagues will take that home, of course!
